Pecan Cranberry Brussel Sprouts


Prep time:     5 minutes
Cook time:    20 minutes
Cost:             $5
Makes:         ~4 servings
 
Ingredients:                                           Cost:
- 20 brussel sprouts                              $2
- 1 cup pecans                                    $2
- 1 cup cranberries                               $1
- Oil
- Spices:
    o   Cinnamon
     o Nutmeg
    o   Paprika
     o Salt and pepper

Cut up sprouts and rinse
Cook in pot until almost soft

Cook sprouts, cranberries and pecans in pan with oil and spices

What to do:
1. Cut ends of sprouts, wash and cut in half
2. Put in pot and cover with water and lid
3. Cook on medium heat for about 10 minutes, until sprouts are almost soft
4. In pan on medium heat add oil, sprouts, cranberries, pecans and spices
5. Cook for about 10 minutes until sprouts are browned

Baked Yams and Salmon


You can serve the brussel sprouts dish with these two options. Highliner puts out wild salmon pieces for about $6 and the yams will be about $3, so the whole meal will be less than $15.
 
Cover salmon in maple syrup and teriyaki 

Bake for 15 minutes

Bake yams and serve with salmon and sprouts
What to do:
1. Preheat oven to 350ºC
2. Wash 2 medium yams and place in oven for about 45 minutes until knife can poke through them
3. Put ½ cup teriyaki sauce and ½ cup maple syrup with 2 cloves of cut garlic in baking pan
4. Add 4 pieces of salmon into pan and bake for 15 minutes
          o Salmon shouldn’t be pink in the middle when done
