This is a
simple meal that is healthy and fast to make. I added half a cup of
dried apricots, but you can also add raisins. You can also choose
different spices, and adding crushed tomatoes is optional.

1 can chickpeas $1.25

1 cup couscous $0.50

1/2 cup dried apricots $1

Vegetables
o
1 small zucchini $1
o 5 green onions $0.25
o
2 carrots $0.25

Spices
o Cumin
o Turmeric

Basil
o Salt and Pepper
What
to do:
1. Cook chopped carrot, green onion and zucchini in a pan on medium heat
2. When browned, add couscous, 2 cups of water, chickpeas and spices
3. Cook covered for about 10 minutes
4.
Add tomatoes and apricots and cook for 5 minutes
