Spaghetti Squash Cakes

Prep time:      10 minutes  
Cook time:     ~30 minutes
Cost:               ~$5
Makes:           2-4 servings

Another take on latkes or fritters, this recipe uses cooked spaghetti squash and breadcrumbs. They are quick to make, (if the squash is already cooked) with few ingredients, and can be eaten on their own, with a side, or as a burger patty.

  
Ingredients:                                     Cost:                                     
-          1 spaghetti squash                    $3
-          2 eggs                                          $1
-          Oil
-          One cup breadcrumbs             $0.50
-          Spices
o   Cumin
o   Thyme
o   Basil
o   Salt and Pepper
 
What to do:
1.      Preheat oven to 400
2.      Cut squash in half, place face down in a pan of water in oven for 45 minutes, until soft
3.      Once squash is cooled, mix all ingredients in bowl
4.      In a pan on medium heat, add oil and place a big, spread out spoon of mix
5.      Flip after 5 minutes, when brown
6.      Cook remaining cakes and eat warm
