Shrimp Paella (pie-ay-ya)

Cook time:   45 minutes

Makes:         ~4 servings

This is a much easier recipe to make than it might seem. It does have saffron, which is an expensive ingredient, but you can use other spices instead and still end up with a tasty dish.

Even though red peppers are not really in season right now, organic onions and fresh shrimp are on sale this week at the Market on Yates, (downtown Victoria, BC) so I planned my recipe around these sales. 

You can also use brown or wild rice instead of white, to make it healthier, although you will need more water and it might take a little longer to cook.


Ingredients:                                                                          Cost:
-          2 cups of white rice                                                              $2       
-          Fresh peeled shrimp (~100 grams)                                      $4
-          1 medium onion                                                                    $1
-          1 red pepper                                                                         $1.50
-          1 lemon (optional)                                                                $0.50
-          Other vegetables (optional)
-          Olive oil or butter
-          Vegetable stock (optional for more flavour)
-          Spices (optional)
o   Saffron
o   Chili powder
o   Salt and Pepper
o   Paprika



Cut up onion and red pepper


Cook vegetables in pan on medium heat

Add rice, water and spices

What to do:
1.      Cut up the onion and red pepper quite small
2.      Put oil or butter in a large pan on medium heat
3.      Place onion and red peppers (and other vegetables) in pan
4.      Cook until onions are lightly browned
5.      Add 2 cups of rice and 3 cups of water or vegetable stock
6.      Add spices
7.      Turn heat to low and cover with lid for 15 minutes
8.      Take lid off and add shrimp
9.      Let cook for about 5-10 minutes
10.  Serve with lemon
